Follow this Besan Barfi recipe for a perfect Indian sweet on every occasion!
Besan Barfi Recipe information
- Time: 30 minutes
- Serves 5
Ingredients
- 4 cups Besan (Gram flour)
- 12 Green cardamoms
- 1 ½ cup Aashirvaad Svasti Ghee
- 2 cup Sugar
- 10 cashews
- 10 almonds
- 2 tbsp Melon seeds
Procedure
- Use ½ cup ghee in a vessel on medium flame and let it melt
- Once the ghee is hot, add the 4 cups of Besan in two parts and roast evenly till Besan absorbs the ghee and becomes thicker
- As you roast, you will notice ghee coming out of the sides of the lumpy Besan and a nutty aroma fill the air
- Roast till Besan turns golden and turn off heat
- Then sprinkle cardamom powder or green cardamoms, mix evenly and set aside
- For making the sugar syrup, use a saucepan to heat 1 cup water and 2 cups of sugar
- Heat and stir till the syrup consistency is one string
- Once the syrup is ready, turn off the heat and mix it with the roasted Besan
- Keep stirring till the mix reached uniformity in texture and sprinkle ½ cardamom powder over it
- Finally, transfer this mix into a greased dish and flatten the top and decorate with cashews and almonds
- Cover and set aside for 30-40 minutes
- Then cut it into squares and enjoy your Besan Barfi!
Some important points to remember
- Make sure to use a heavy vessel that is not non-stick while roasting the Besan
- Roasting Besan (in ghee) in parts will allow the Besan to nicely soak in ghee and turn golden faster
- Be mindful of the flame while making the sugar syrup to avoid burning
